Monday Moments

Hey everyone! Happy Leap day!

I didn't take a lot of pictures this last week. It was the Captain's first week of work!

On Wednesday night we decided to skip institute and watch Gilmore Girls and have hot chocolate. It was seriously the best cup of hot chocolate that I have ever made (from a mix) It was just Steven's Mint Hot chocolate but I made it with milk and half and half. It was the perfect temperature and the perfect taste... so good. 

Well, I may not have any pictures, but I do have a story from this last week! I was walking home and this random white SUV with a nice looking old man driving it stopped in front of me as I was about to cross the street. But I felt kind of weird about it so I didn't try to talk to him.

Especially when I was across the street and started keeping pace with me on the shoulder. He yelled out the window at me, but like I said, I felt a little weird so I didn't answer him. I knew that he probably just wanted directions or something, but I just wasn't feeling it that day.

So then he stayed on the shoulder drove a little faster and I hoped that would be the end of it.


I watched him get farther down the road and flip around. As I was watching him I kept muttering to myself, don't turn around, don't turn around, I'll RUN. I will run.

So he flipped around and I started running home. I turned off the main road and he followed me! He didn't turn onto my street but then I saw him trolling down the road from our window!

And this story caused my husband to buy me a can of mace ha ha

You know how you're sitting in the middle of your life, just right there on the floor of it, with everything all puddled around you. The good things, the bad things, the past sprawled on one side and the future in all its glory and horror on the other. And it just kind of hits you that you've made it this far?

I have been having a lot of those moments recently. I keep getting caught in tidal pools of feeling so incredibly blessed, as well as pools of feeling like absolutely everything is falling apart. It seems like these two things shouldn't be able to exist side by side, but they do. 

If you all didn't know, my husband, the Captain, has been in the news a lot lately trying to get SB-73 passed for medical marijuana. And if you know me, you might be a little confused that I ended up with him. Because we are so different in so many ways. Because one of the reasons that we didn't have a typical mormon dating and married in 3 months kind of story is because the Captain was using marijuana to handle pain from breaking his back and neck a few years ago. And this is something that I had to keep secret from everyone. And it was something that meant unless he stopped, we couldn't get married in the temple. I wouldn't give that up, so I dated him knowing that we may have to wait years before we got married. And I saw all these people around me getting engaged. 

It was terribly frustrating for me. 

And now, here I am, married. It happened. In the temple. It was literally a miracle for us. 

Then the Captain got on board with this bill and I hesitantly gave my support.

Then BOOM. The church comes out with a statement against the bill. And BOOM the Captain is in the papers responding to the bill. And suddenly my world was falling apart. I wondered if we would be kicked out of the church. I wondered if the Captain would leave. And I poured all of that into my prayer journal.

And bam, the Lord answered. I had barely put down my pen when the Captain was holding me and answering all of my fears that I hadn't spoken out loud.

But the Captain was still without a job (he lost his job literally a week before we got married) and I worried that he wouldn't get one because of the press on this, or because he would be in too much pain to work. And I poured all of that into my prayer journal.

A few days later the Captain got a job. He's only had it a few days but he has a job.

There have been so many instances of this lately that it's pretty unbelievable to me. I have never been answered so quickly. I have never felt so loved and so taken care of. But there have been too many instances of the Lord looking out for me in the past year for me to ignore. From little things like making the Flight to Florida before we got engaged, to the Captain being able to function in pain because he couldn't use marijuana, to me getting more hours at work this year. So many times there have been miracles for me and I just feel so blessed, even on this crazy rollercoaster.

Triple Berry Parfait

So I'm sure that you all know that I kind of hate on Cereal.
It's not that I hate it, it's just that I feel there is no appropriate time to eat it.
But, one thing I do love is Granola, which is kind of a Cereal.
Sort of.

I do hate yogurt as well. Except Tillamook Greek Yogurt. It's almost as good as ice cream guys.

And frozen berries have been my jam forever.

This recipe combines all three!

1/2 cup granola (THIS is my favorite! Swiss Granola)
2.7 ounces Greek Yogurt (or about half of the yogurt cup. THIS is my favorite)

And there you have it! Simple to assemble breakfast that is NOT cereal. Sort of. :)

Writing Journal #61

You asked me to carry this rock. The size of my fist and jagged. 
You'd asked others to carry it, but it cut their hands. 
They gave it back.

It cut my hands too.
But I hid my hands in my sleeves 
so you wouldn't see the damage
No one could see, or they'd know about the rock

I swallowed it whole.

Every now and again you'd hand me a pebble
Some small, like a pill
I swallowed them down
Gallons of Sand smoothies
Until I was weighted down to this earth like I was standing on Jupiter

Then the rock was gone

thrown to the masses
like ashes to the sea
a cleansing
what could be cleaner than ash?

but I was empty without it
sand flowing from my fingertips
human hourglass hands

the cuts were healed over canyons that only I could feel in the grooves of my skin

They all carried you now,
like the wind

while I sank under the weight of the air

Monday Moments

Hey there everyone! :) How was your weekend? Mine wasn't long enough, but then again, it rarely is!

Well, I'll just dive right into the moments, there were a lot this last week!

The Captain brought me roses for Valentines day. We celebrated the day after since I had that Monday off! So I made him some purple crepes for breakfast. The Captain likes randomly colored food for some reason!

We had dinner at Red Robin. As you can see I got the Buzz clucks and Macaroni and Cheese. I was pretty impressed, although I wished that there was a little more sauce or cheese on my macaroni. I'm a sucker for anything buffalo! It's just the right amount of spice!

On Wednesday I went with the Captain to Club 50 West so that he could be a panelist on Mormon Stories. The food wasn't bad, but the service was terrible! They didn't have anything gluten free (which was fine) but someone ate the Captain's meal and they didn't get him a new one until 2 minutes until he had to go on. They didn't even apologize for it. I would not recommend going there.

The Captain and I went out to lunch on Thursday because he got a job!! :) We are so excited! His first day is today, send him good vibes! :)

I painted this watercolor lion for my Daddy's birthday. Funny story, my father-in-law and my dad have the same birthday! But they're not the same age. 
My daddy has always been a lion kind of guy so I hope he liked it!
Also I really need to get some watercolor paper!

I've been working on this journal for 3 years now. I've obsessively counted how many pages left for the past 2.
In case you were wondering, today the number is 20.
SO close!

Yesterday I made this dinner. I was overly proud of it. Especially since my mom was the one who marinaded the meat, but I did cook all of it! Those potatoes are the best roasted potatoes ever though. HERE's the recipe!

Today's Writing journal was a poem that I had in this endlessly long list note of poems that I wrote whenever they popped into my head and I didn't have pen and paper. Usually when I was trying to fall asleep, because that's always the best time to have all the ideas ;)

I locked up my emotions
Walked them one by one to the box I would keep them in
To the dresser drawers 
With a gun to their heads
I told them to get in
I locked them up
Sadness with tears streaming down her face,  
Anger his hands clenched white knuckled,  and mouth set in a hard line
Love went slowly, but without protest, her eyes shining like she understood
Joy borrowed tears from sadness for the occasion. 
Passion went last. She fought me.  With wild curling hair and burning eyes she bucked and kicked and ran. 
But I caught her
And I locked her up too. 
Until I was all empty inside me
And my dresser was full.

Monday Moments

So apparently I didn't take any pictures this last week. Well, unless you count food. Since I got my fitness tracker I've started taking pictures of almost all my meals, just so I can know what I use to keep myself alive. Because people ask me all the time how I function since I don't really like sandwiches, and I always have no idea what to tell them. Now I can tell them it's mostly granola and pasta ha ha

Sushi Express guys. I'll keep singing their praises.

My sweet Captain made me this grilled cheese sandwich on Valentines. I know I just said that I don't really like Sandwiches, but the grilled variety and generally good ;)

Anyway, I promise I did actually do things last week, but mostly the normal things. I went to the temple (Oqquirh... I know you've never seen me post a picture of that before ;) ), went to institute, read books

Oh, and I did practice Hand lettering and water color. 
I may or may not have just remembered that I could have taken pictures of them.

Anyway, how was your Valentines? The Captain and I are celebrating it today since I have work off :) I made him purple gluten free vanilla crepes for breakfast and he brought me pink roses :) I'm sure that there will be pictures of at least the roses next week! I was going to post a crepe recipe for you guys on Friday so that you could make them for yourself or loved ones, but it didn't happen. I'll work on being better!

Writing Journal #41

The word
The idea, 
has stuck into everyone's minds
like the sandman dropped spiked dreams into everyone's heads

scary fairytales
with all the danger and drama wrapped up in two imperfect human beings
our own wicked witches and poisoned apples

An atomic bomb wrapped in titanium and diamonds...
or not.

I've seen the mushroom clouds
the tears on the faces of burn victims
wishing they'd died in the flash of light
became the mist that rolled in waves through the destroyed towns

I never wanted to be a bomb
I avoid the "M" word

Yet, I've taken the "L" word
handled it with bare hands
like it wasn't explosive
like it didn't have the power to rip me up
to take all the secrets and smear them on the ground

Every time, I came away maimed
more of me spilling out

but I picked up the bomb again, no gloves
because maybe it will go off, 
Maybe it won't

Maybe I like the danger

Maybe I like the way the adrenaline makes my nerves sing
Like the way two individuals explode
ideas, thoughts, feelings
into each other

come out broken, bruised

It's not without casualties
but they are the art of the soul

sometimes things that are the most shattered
reflect the most light

Monday Moments

 Hello there! Welcome to another week :) I was not anxious to leave the weekend behind, but I'd be lying if I said that I honestly hated Mondays. It's a good chance to start over on all my goals! Plus, new things to look forward to. For me, the week starts on Monday, not Sunday :)

I may be more than slightly obsessed with sunsets.

I posted the Eggs Deluxe recipe and then I had to make it for dinner because it sounded so good! Although we didn't have any red peppers, which was sad. But still so delicious!

You can't really tell, but that is a pink pancake! The Captain made us some for breakfast on Saturday because he likes colored food (I think he had green ones like 2 days before this)

New church notebooks! I take any excuse to get new notebooks. Bags, Notebooks and pens... It's a real problem. I found two bags online today that I'm debating about... Such is my life. I am proud to say that I haven't bought a new bag in... dang, over a year! I'm suddenly very proud of myself!

I tried tomatoes in my homemade mac and cheese the other night because lately I'm obsessed with them and man was it amazing! I was such a happy girl. Anyone else try it? What did you think?

We'll end with my sweet little nephew :) He just got blessed (You know this already if you follow me on insta! or really any platform ha ha) love that little one.

Scripture Study with Sharpie

So I don't know about you guys, but I always switching up my scripture study method (you never would have guessed that, I know, I'm always consistent in everything). 

Anyway, I kind of hoard pens and notebooks... and those kinds of things. Over Christmas I was doing some shopping, trying to get the Captain his favorite pens.
The office/school supply section is always a dangerous place for me to be, because as I've said, I'm a little addicted to them. 
I managed to only leave with some Sharpie Pens on top of what I bought for him, so it was kind of a win. But since I bought them, I had to justify their use and so I decided to use them for scripture study.
I may also have a slight color coding problem (as in if I could, I would color code all the things).

It's fine.

The system I came up with was this:

Pink- my own thoughts/miscellaneous 
Blue- The people of the chapter, as well as summary of where they are at the beginning of studying
Mint- Characteristics of God/Jesus Christ
Peach- Take away for the day/ section
Black- Title and questions to ask myself for introspection

Apparently I didn't have any questions for myself on either of the days I picked.

I like them because so far they haven't bled through the pages and they're pretty smooth to write with.

Also if you were curious, both those notebooks/journals are from Target. I just finished the orange one and the gray is it's replacement :)

Eggs Deluxe

Guess what? I'm sharing another recipe :)

This is kind of a non-recipe recipe

This is one of our staples at our house because it's delicious and filling even if it is a little time consuming.

It takes about 45 minutes start to finish.
It's a full meal for two, but could easily serve more as a side dish.


6 Eggs
1 Potato
Quarter to a half of Red Pepper
Some onion
Salt and Pepper
Olive Oil/Avocado Oil


1. Microwave Potato. The time varies slightly depending on the size of the potato. 7-9 minutes is usually good to cook it through.

2. Cut onions and red pepper. Start in pan on medium to low heat with enough oil to lightly coat the bottom of the pan. Stir occasionally.

3. Crack and scramble eggs. Add salt and pepper.

4. Dice tomatoes and add to eggs. (I usually use cherry tomatoes and I use a LOT, because tomatoes are the best.)

5. Take potato out and dice. I use a fork or something similar to hold it while I dice, it's going to be hot! So be careful! Especially with that steam.

6. Add potato to  onions and red pepper. Turn heat up to medium, or high heat. You can brown the potatoes if you'd like, I find that it doesn't make much difference.

7. Pour in egg and tomato mixture. Stir occasionally till cooked through. Remember that there is extra moisture from the tomatoes. 

8. Cover in cheese and cover pan till melted!

Serve hot and enjoy! I put hot sauce on mine but the Captain loves it plain! :)

Monday Moments

Back to regular life! Which is kind of good in some ways. There's something wonderful about routines. There's also something wonderful about breaking them ;)

Went out to dinner with HATRED to Kneaders. I must say that the salad was pretty good. That being said it's probably my least favorite of the places I've gone to get berry salad before. Mainly because the pieces of lettuce were giant. Does this happen to anyone else? How big do they think our mouths are? Really. 

That one time I learned "Discourt" is not a word and that I'd been hearing the Anberlin song wrong for my whole life. Discord...

This was my attempt at doing a watercolor of what I call "God's Pupil" when there's this big ring of light circling the moon. We saw it on our way down to California and I thought it would be fun to watercolor. :)

Our ponderize for the past two weeks! How is that going for you guys? 

I'm lately in love with salads. Especially with tomatoes. Pretty much tomatoes are my favorite right now. I think that after all that fast food and eating out on the trip I'm just craving freshness. 
Also that is a glass of brazilian lemonade my husband made for us... so good! :) Sometimes when there is really good food I get hoarders mentality about it. I took a whole extra glass of it just so I could be sure I got my fair share.
