Eggs Deluxe

Guess what? I'm sharing another recipe :)

This is kind of a non-recipe recipe

This is one of our staples at our house because it's delicious and filling even if it is a little time consuming.

It takes about 45 minutes start to finish.
It's a full meal for two, but could easily serve more as a side dish.


6 Eggs
1 Potato
Quarter to a half of Red Pepper
Some onion
Salt and Pepper
Olive Oil/Avocado Oil


1. Microwave Potato. The time varies slightly depending on the size of the potato. 7-9 minutes is usually good to cook it through.

2. Cut onions and red pepper. Start in pan on medium to low heat with enough oil to lightly coat the bottom of the pan. Stir occasionally.

3. Crack and scramble eggs. Add salt and pepper.

4. Dice tomatoes and add to eggs. (I usually use cherry tomatoes and I use a LOT, because tomatoes are the best.)

5. Take potato out and dice. I use a fork or something similar to hold it while I dice, it's going to be hot! So be careful! Especially with that steam.

6. Add potato to  onions and red pepper. Turn heat up to medium, or high heat. You can brown the potatoes if you'd like, I find that it doesn't make much difference.

7. Pour in egg and tomato mixture. Stir occasionally till cooked through. Remember that there is extra moisture from the tomatoes. 

8. Cover in cheese and cover pan till melted!

Serve hot and enjoy! I put hot sauce on mine but the Captain loves it plain! :)
